is there anyone out there that makes a 1911 that shoots the .357 sig round?
STI might, but think it is (or was) on one of their double stack frames.
a check to their site http://www.stiguns.com/ , shows nothing at this time, so it looks like a custom project
the real question is why would you want to do .357 sig, the 1911 is a large frame gun and there is a whole class of
.38 super/ 9x23 etc. cartridges that should launch the same bullets at similar or better velocities.
and .38 supers at least are readily available from the factory

a discussion on .357 sig in 1911's
Cheapest route is probably a Para Ord 40sw and get a clark ramped barrel in 357 sig from storm lake, Kart or Barsto. I think i remember seeing an EFK Firedragon 1911 barrel in .357 sig. I think it will need to be ramped to feed correctly though.
Para Ord ~$650
Barrel $150-200
Fitting $100
= $950 possible for the cheap route.
I'm thinking a 38 super coughing out hot 9x23 or a 9mm springfield 1911 firing +p+ loads will get you in the same velocity range as .357 sig with less trouble. all of them ballpark in the 1300-1400fps range with the same bullet weights and the right loadings.
